Dukan Bread

One thing I've really, really missed since starting this diet is bread or crackers, so I tried this recipe and while certainly nothing like the real thing, good enough to distract my palate.

Ingredients
  • 2 tablespoons of oat bran
  • 1 tablespoon of wheat bran
  • 1 egg
  • 2 egg whites (I forgot this and it turned out all right)
  • 3 tablespoons of fromage blanc or fromage frais
  • 1/2 pack of yeast
  • Salt, spices (be experimental try curry, Tikka, cinnamon, nutmeg)
Directions
  • Beat the eggs in a bowl with the fromage, add the oats and yeast, mix well.
  • Salt and spice
  • Pour the mixture in a deep microwaveable dish remember the mixture will rise
  • Microwave on full for 3 minutes and test. May need up to 5 minutes depending on thickness of dish.

Caramel Pots de Crème

I've recently started the Dukan diet and am trying new recipes to vary my food. Desserts are the hardest on this diet, since all fruit is proscribed.

This is an easy recipe, and valid for all phases of the diet, but you have to be patient since it is best made the night before.

Ingredients
  • 3 cups of non-fat milk
  • 1/2 tsp agar-agar
  • 1 1/2 tsp liquid Hermestas
  • 4 egg yolks
  • 10 drops caramel extract *
Directions
  • pour the cold milk into a sauce pan
  • add the agar-agar and stir well and let rest for 15 mins
  • add the Hermestas
  • beat the egg yolks in a separate bowl
  • brink milk to a boil and wait 1 minute
  • add roughly 1 cup of the hot milk to the egg yolks and stir
  • return the egg/milk combination to the sauce pan and, stirring constantly, boil for another two minutes
  • add the caramel extract
  • pour into cups and let cool
  • when at room temperature, put in the refrigerator to set over night
Comments
This is very light. I might try to make it more custardy by reducing the milk next time.
