Aioli

  • 1 garlic clove
  • 1 egg yolk
  • 1 tsp mustard (French style)
  • 2 tbs fromage blanc
  • dash of fresh lemon juice
Mash the garlic and mix with the egg yolk, mustard, salt & pepper to taste and the fromage blanc. Warm in a double-boiler, stirring constantly until the mixture thickens. Let cool and add a dash of lemon juice.

Perfect as a salad sauce or with fish or on steamed vegetables.

Zucchini Clafoutis

adapted from this recipe

Prep time : 20 min
Cooking : 30 min

Ingredients :
  • 2 small zucchini
  • 2 large eggs
  • 25 cl non fat milk
  • 2 tbl corn starch
  • salt, pepper, garlic

  1. Heat oven to 210°C (410°F)
  2. Slice the zucchini thinly and sautée in a pan for 5 minutes. drain
  3. Beat the eggs and the starch in a bowl, add the milk
  4. Add salt and pepper and press garlic into mixture
  5. Put the vegetables in an oven proof dish, pour mixture over
  6. cook for 20- 25 min until the top is slightly browned
Haven't tasted it yet, but it smells good!

Dukan Muffins

2 tbs oat bran
1 tbs wheat bran
1 tbs liquid sweetener
4 tbs skim milk powder
1 egg
1 tsp baking powder (to make it rise)
artificial flavors to taste or spices


Mix all ingredients, beat well and pour into silicone muffin tins

Bake at 350° for about 15 minutes

Let cool.

Thai Chicken Cakes

Ingredients

2 tablespoons red (or yellow depending on taste) curry paste
1 tablespoon fish sauce
1 teaspoon sweetner
500g chicken mince

Method

Combine curry paste, fish sauce and sweetner with 2 teaspoons water in a large bowl. Add chicken mince and stir until well combined and sticky. Using wet hands, form mince mixture into patties about 7cm in diameter and 7mm thick (this mixture is VERY moist but cooks nicely).

Lightly oil a large frying pan on high. Cook chicken cakes in batches for 2 minutes each side, until golden all over and cooked through. Reduce heat to medium when cooking second side. Drain on paper towel.

Dukan Mayonnaise

1 egg yolk
1 tsp mustard
1 tbs fromage blanc
spices

beat egg yolk and mustard
add fromage blanc and mix well
add spices

my mayonnaise is a bit runny. I put it in the fridge and we will see if it sets.

Chocolate cups - orgasm version

For 2 people:

Prep time : 5 minutes
Cook time: 15 minutes

  • 50 ml of fat-free milk
  • 1 pinch of ground cinnamon
  • 5 drops of caramel flavor
  • 1.5 tbs fat-free cocoa powder (i.e. Van Houten or from health food store)
  • 1 tbs Hermestas (or to taste)
  • 2 egg yolks

Bring the milk, cinnamon and vanilla to a boil.

Add the cocoa and the Hermestas, mixing well

Remove from heat and let cool

Beat the eggs and add to the cooled milk/chocolate mix

Pour into individual baking cups

Place the cups into a large baking pan and add hot water so that it reaches the level of the custard in the pots

Cook in the oven for 15 mins at 180°C (350°F)

Chocolate Pots - Official Recipe

For 4 people:

4 pinches of ground cinnamon
20 drops of vanilla extract (sugar and oil free)
4 tbs fat-free cocoa powder (i.e. Van Houten or from health food store)
4 tbs Hermestas
4 eggs

Dukan Bread

One thing I've really, really missed since starting this diet is bread or crackers, so I tried this recipe and while certainly nothing like the real thing, good enough to distract my palate.

Ingredients
  • 2 tablespoons of oat bran
  • 1 tablespoon of wheat bran
  • 1 egg
  • 2 egg whites (I forgot this and it turned out all right)
  • 3 tablespoons of fromage blanc or fromage frais
  • 1/2 pack of yeast
  • Salt, spices (be experimental try curry, Tikka, cinnamon, nutmeg)
Directions
  • Beat the eggs in a bowl with the fromage, add the oats and yeast, mix well.
  • Salt and spice
  • Pour the mixture in a deep microwaveable dish remember the mixture will rise
  • Microwave on full for 3 minutes and test. May need up to 5 minutes depending on thickness of dish.

Caramel Pots de Crème

I've recently started the Dukan diet and am trying new recipes to vary my food. Desserts are the hardest on this diet, since all fruit is proscribed.

This is an easy recipe, and valid for all phases of the diet, but you have to be patient since it is best made the night before.

Ingredients
  • 3 cups of non-fat milk
  • 1/2 tsp agar-agar
  • 1 1/2 tsp liquid Hermestas
  • 4 egg yolks
  • 10 drops caramel extract *
Directions
  • pour the cold milk into a sauce pan
  • add the agar-agar and stir well and let rest for 15 mins
  • add the Hermestas
  • beat the egg yolks in a separate bowl
  • brink milk to a boil and wait 1 minute
  • add roughly 1 cup of the hot milk to the egg yolks and stir
  • return the egg/milk combination to the sauce pan and, stirring constantly, boil for another two minutes
  • add the caramel extract
  • pour into cups and let cool
  • when at room temperature, put in the refrigerator to set over night
Comments
This is very light. I might try to make it more custardy by reducing the milk next time.
